Hibiscus Honey Panna Cotta
Recipe by the Clif Family Culinary Team
INGREDIENTS:
3 sheets of gelatin (140 bronze)
1 Tbsp. dried Jamaica/Hibiscus flowers (found in most Latin markets), transferred to a teabag or teaball
1 ¼ cups heavy cream
7 Tbsp. Clif Family Solar Grown™ Honey with Desert Hibiscus
½ pod vanilla bean, scraped
1 ¾ cup buttermilk
Cooking spray, as needed
DIRECTIONS:
Bloom gelatin in ice water.
In a medium saucepan, combine heavy cream, Clif Family Solar Grown™ Hibiscus Honey, teabag of dried hibiscus flowers and scraped vanilla bean paste and heat over medium-high heat just until mixture begins to simmer.
Remove from the heat and remove the teabag. Stir in the bloomed gelatin until fully incorporated. Add buttermilk and stir until combined.
Spray a muffin tin with cooking spray and portion about ½ a cup in each cavity. Refrigerate until fully set, about 2-3 hours.
Use a small offset spatula to remove each panna cotta. Serve inverted on a plate. Garnish with fresh fruit, edible flowers and/or additional hibiscus honey drizzled over the top.
