Meyer Lemon Roasted Chicken with Clif Family Organic Estate Olive OilRecipe by Executive Chef John McConnell
Yields 3-4 servings
1 2-3lb chicken
2 Tbsp salt
Season chicken ahead of cooking by evenly applying salt across all surfaces, including the inside cavity, overnight or for about 12 hours prior to cooking.
Preheat oven to 400° F, preferably with convection.
In a small bowl, combine all ingredients for the glaze and stir to combine.
Using a paper towel, blot the chicken dry to remove any excess moisture and transfer to a baking dish. Using a pastry brush, glaze chicken with the Meyer Lemon glaze.
Roast the chicken, rotating every 7-10 minutes until the skin is golden brown. Baste with glaze each time you rotate. Glaze again and drop the oven temperature to 300 and continue to roast until the internal temperature reaches 160 degrees (about 30-40 minutes). Remove chicken from oven and allow to rest for 10-15 minutes prior to carving.
