Hibiscus Honey Cranberry Sauce
Recipe by the Clif Family Culinary Team
Yield: 2 cups – 6-8 servings
INGREDIENTS:
1 jar Clif Family Solar Grown™ Honey with Desert Hibiscus
1 tsp grated ginger
1 orange, zested
1 whole allspice berry
1 lb fresh cranberries
½ cup raw sugar
½ tsp salt
DIRECTIONS:
Combine all ingredients in a medium-sized stainless steel mixing bowl.
Cover tightly with cling wrap and place the mixing bowl over a pot of boiling water and double-boil for 2 – 2.5 hours. Gently remove a corner of the cling wrap and stir/gently mash every 20-30 minutes, helping some of the cranberries to break down while keeping some whole. Replace cling wrap and continue to cook.
Remove the whole allspice berry, cool, and serve.
