Red Pepper Caesar Mocktail/Cocktail:
A Twist on Tradition with Clif Family Organic Red Pepper Jam
Recipe by Jessie Featherstone
INGREDIENTS:
1 jar Clif Family Organic Red Pepper Jam
1-2 Tbsp. Clif Family Piccante Calabrese Hot Sauce, depending on desired spiciness
1 Tbsp. fish sauce
¼ cup Worcestershire sauce
¼ cup dill pickle brine
¼ cup lemon juice
Non-flavored sparkling water
Dill pickle spears, for garnish
Lime wedges, for garnish
Celery salt, optional
Optional Cocktail Version:
2 oz Vodka, Tequilla or 1 bottle Mexican lager of choice, per cocktail
DIRECTIONS:
Caesar Mix:
In a large resealable container or large mason jar, empty one full jar of Clif Family Organic Red Pepper Jam into the container. Refill the empty jar with hot water (not boiling, just hot) to get all the flavor from the jar and dilute the preserve. Stir them together then strain the pulp and seeds out using a fine mesh sieve. While straining, gently press the pulp against the sides of the mesh strainer to release as much of the liquid/flavor as possible.
Add the Clif Family Piccante Calabrese Hot Sauce, Worcestershire sauce, pickle brine, lemon juice, and fish sauce. Stir to combine. Chill in the refrigerator until ready to make a mocktail or cocktail.
Mocktail:
Rim the glass with celery salt by running the juice of a lime wedge over the rim and then dipping the rim in celery salt.
Fill the glass with ice, pour 2/3 full with Red Pepper Caesar mix, and top with a generous splash of sparkling water. Gently stir to incorporate. Garnish with a dill pickle spear and lime wedge.
