Chocolate Covered Snowball Cocktail

Makes 1 cocktail
INGREDIENTS:
Cacao Honey Syrup:
4 oz water
5.5 oz or 1 full jar, Clif Family Solar Grown™ Cacao Honey Spread (reserve 1 tsp for rimming the glass)
Cocktail:
2 oz Vodka
2 oz unsweetened, full fat coconut milk
1.5 oz Crème de Cacao
1.5 oz Cacao Honey Syrup (see below)
Ice
Garnishes (optional):
1 tsp Solar Grown Cacao™ Honey Spread
shredded coconut
coco powder
shaved chocolate
DIRECTIONS:
Cacao Honey Syrup:
In a small saucepan over medium-high heat, combine 1 1/2 full jars of Clif Family Solar Grown™ Cacao Honey Spread and 6 oz of water. Bring to a boil. Reduce heat and simmer for 1-2 minutes or until honey has completely dissolved. Remove from heat and allow to cool completely. Store in an airtight, squeeze bottle for up to two weeks in the refrigerator.
Cocktail:
Drizzle 1 tablespoon Solar Grown Cacao Honey Spread on a clean plate. Gently dip all edges of the rim of a martini glass in the Honey Spread. Pour some shredded coconut onto the plate and re-dip the edges of the glass in the coconut shreds, ensuring all sides are covered and sticking with coconut.
Fill a cocktail shaker two-thirds full of ice. Add the vodka, coconut milk, crème de cacao, and cacao honey syrup and shake until well mixed and chilled. Strain into the prepared martini glass.
Top with sprinkled cacao powder and/or shaved chocolate (optional).
