Blackberry Lemon Thyme Fizz Mocktail

INGREDIENTS:
Blackberry Thyme Quick Shrub:
2/3 cup apple cider or champagne vinegar
8 Tbsp or ½ jar Clif Family Organic Blackberry Preserves
5 Tbsp Clif Family Solar Grown™ Raw Honey
6-8 sprigs fresh Lemon Thyme
3 Tbsp water
Mocktail:
Ice
1 oz blackberry thyme shrub
2 oz fresh pineapple juice
½ oz lemon juice, freshly squeezed
Ginger ale or ginger beer for topping
Optional Garnishes: Thyme or rosemary sprigs and a lemon twist
DIRECTIONS:
Blackberry Thyme Shrub:
In resealable container, thoroughly mix together the vinegar, blackberry preserves and raw honey. Add in the lemon thyme and water and stir to incorporate. Refrigerate covered a minimum of overnight before using to allow all flavors to meld together.
Remove the thyme sprigs. Using a fine mesh sieve, strain out the remaining solids and discard. Save the shrub syrup in an airtight container and store in the refrigerator.
While this shrub is great for mocktails, cocktails and spritzes, it also makes a delicious salad dressing when added to olive oil.
Mocktail:
Fill a highball or Collins glass 2/3 full of ice. Add the blackberry thyme shrub, pineapple juice, fresh lemon juice, and gin (if using). Using a bartender’s spoon, give the mixture a thorough stir. Top with ginger ale and garnish with fresh thyme or rosemary sprigs and a lemon twist. Enjoy!
Make it a cocktail: add 1.5 oz gin to the shrub and fresh juices before stirring.
