Savory Onion & Blue Cheese Baklava

INGREDIENTS:
1 package Phyllo dough
4oz butter
2 Tbsp Clif Family Organic Extra Virgin Olive Oil
1 jar Clif Family Organic Savory Jam
1 package Clif Family Organic Rosemary Roasted Almonds & Pistachios
8oz Blue Cheese, crumbled
DIRECTIONS:
Preheat the oven to 350 degrees.
In a small saucepan, gently melt the butter over low heat. Once fully melted, remove from heat and add the olive oil. Stir to combine and set aside.
Separate out some of the bright green pistachios from the nut mix bag and roughly chop. Set aside for garnish after baking. Roughly chop the remaining nut mix.
Lightly grease a 9″x14″ baking dish with the butter and oil mixture. Place one sheet of phyllo into the pan and brush with the butter mixture. Repeat these steps with three more phyllo pastry sheets, arranging them in layers.
Gently and evenly spread half of the jar of onion jam on top of the layers of buttered phyllo dough. Scatter half of the chopped nut mix and crumble in half of the blue cheese. Add another three layers of buttered phyllo sheets followed by the remaining onion jam, nuts, and blue cheese crumbles. Finish with three layers of buttered filo pastry.
Before baking the baklava, carefully cut it into a diamond pattern in the pan. Make sure to cut all the way through the bottom layer, so the phyllo doesn’t break when you cut it again after baking. Sprinkle the top layer with the reserved chopped pistachios.
Bake for 35 minutes or until golden brown and flakey.
