Recipe By Chef John McConnell
Marinara, Red Sauce, Tomato Sauce – many people have fond, comforting memories of a sauce that Mom or Grandma used to make. As a very familial tradition, recipes are commonly passed down from generation to generation where the quality of the best sauces begin with the best ingredients. And quality, flavorful, organic ingredients are at the pillar of all Clif Family Napa Valley food products and recipes.
Pasta With Tomato, Bacon ‘Sugo’
Ingredients:
6 bacon slices
1 small onion, diced small
1-15-ounce jar of Clif Family Napa Valley Farm Tomato Sauce
6 tbsp heavy cream
1 tsp dried oregano
1-8 ounce package pasta
1 cup frozen peas, thawed
¼ cup grated Parmesan cheese
Method:
Cut slices of bacon crosswise into ½ inch strips. Cook chopped bacon in a large skillet over medium-heat until crisp. Using a slotted spoon, transfer bacon to paper towels to drain.
Pour off all but three tablespoons of fat from the skillet. Add the onion to the same skillet and sauté over low heat until soft, about five minutes. Add the Clif Family Napa Valley Farm Tomato Sauce, cream and dried oregano. Simmer sauce on medium-low until slightly thickened, about eight minutes. Mix in cooked pasta, peas and bacon; and toss to coat with sauce. Garnish with grated Parmesan.
