Curry & Hot Honey Roasted Peanuts

Looking for a snack with a bit of a kick? Look no further than these Curry & Hot Honey Roasted Peanuts! The combination of fragrant curry powder and spicy hot honey makes these peanuts a flavorful and addictive snack. Plus, roasting them in the oven gives them a satisfying crunch. Perfect for gameday, a party, or just a midday treat, these peanuts are easy to make and sure to impress. Get ready to snack on some seriously delicious peanuts!
INGREDIENTS:
2 limes, zested and juiced, separated
1 Tbsp Kaffir or Makrut lime leaves, chiffonade/finely sliced
2 Tbsp Madras Curry powder
1 Tbsp + 1tsp kosher salt
4 cups unsalted peanuts
DIRECTIONS:
Preheat oven to 300° F.
In a medium sized mixing bowl, whisk together Solar Grown™ Hot Honey, lime juice, salt, and curry powder. Add peanuts and stir to coat. Transfer to a parchment or foil lined baking sheet. Spread across in a thin layer.
Bake until lightly caramelized. Remove from oven and allow to cool before transferring to a mixing bowl. Toss with lime zest and kaffir lime threads.
