Our Almond Butter Blossom Cookies are a spin on the traditional holiday peanut butter cookie with a chocolate kiss candy in it… ours has delicious almond flavor and a gorgeous look perfect for any holiday cookie platter or cookie exchange.
1 ¾ cups all-purpose flour
1 tsp baking soda
1 tsp kosher salt
4 ounces (1 stick) butter, at room temperature
½ cup smooth almond butter
½ cup granulated sugar, plus additional for rolling
½ cup light brown sugar
1 large egg
1 Tbsp milk
½ tsp vanilla extract
½ tsp almond extract
Clif Family Dark Chocolate Sea Salt Almonds (1 per cookie)
Sift together flour, baking soda and salt; set aside. Using an electric mixer, cream together butter, almond butter, 1/2 cup granulated sugar and light brown sugar. Add egg, milk, vanilla and almond extracts; beat until well blended. Gradually add flour mixture, mixing thoroughly. If dough is very soft, refrigerate for 30 minutes.
Preheat oven to 375 degrees. Spray, oil or line a cookie sheet with parchment and set aside. Form dough into 1-inch balls. Roll cookies in sugar and place 2 inches apart on cookie sheet. Bake until develops some golden brown color and puffed, about 8 minutes. Remove sheet from oven and lightly press a chocolate almond into center of each cookie, allowing it to crack slightly. Transfer cookies to wire rack to cool completely.
Yield: 4 dozen 2 inch cookies.
